Ingredients
  • 2 pounds red potatoes, cubed
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 7 ounces bacon, cubed
  • 1 cup diced celery
  • 3 scallions, sliced
  • ⅔ cup mayonnaise
  • 2 tablespoons finely chopped parsley
  • 2 tablespoons finely chopped dill
  • 2 tablespoons finely chopped basil
  • 1 clove garlic, minced
  • 4 ounces crumbled blue cheese
  • ½ teaspoon black pepper
  • 2 tablespoons dill sprigs
Directions
  1. Fill a large pot with water and place it over high heat.
  2. Add the sliced potatoes and salt. Bring to a boil.
  3. Cook the potatoes for 10 minutes, or until tender. Drain the potatoes and set aside to cool.
  4. Place a pan over medium heat, then add the olive oil and bacon.
  5. Cook bacon for 5 minutes, or until crisp. Remove the pan from heat and set the bacon aside.
  6. To a large salad bowl, add the boiled potatoes, bacon pieces, celery, scallions, mayonnaise, parsley, dill, basil, garlic, blue cheese, and black pepper.
  7. Toss to combine, then garnish with the dill sprigs.
  8. Serve and enjoy.
