Recipe: Aperol Snow Cone

Our favorite spritz ingredient shows up in a grown-up snow cone

Who didn't love a cold, frosty snow cone as a kid? Now's the time to bring back the nostalgia with an adult twist on the dessert. Inspired by our favorite summer cocktail, the Aperol Spritz, this snow cone is topped with a ginger-and-mint syrup spiked with the Italian liqueur. It's a bitter, sweet and refreshing way to end a meal on a hot day.

Snow cones not your thing? Add four ounces of sparkling wine, and you've turned this treat into a slushie cocktail perfect for summer.

Aperol Snow Cone

A sweet syrup of ginger and mint is mixed with bitter Aperol to top a refreshing adult snow cone.

Ingredients
  • ½ cup sugar
  • ¼ cup water
  • 3 mint sprigs
  • 1 lime, zested with a peeler
  • One 1-inch piece ginger, sliced
  • ½ cup Aperol
  • Finely crushed ice, for serving
  • Lime wedges, for serving
Directions
  1. In a small saucepan, combine the sugar, water, mint, lime zest and ginger over medium-high heat. Bring the mixture to a simmer and continuously stir until the sugar has completely dissolved, 2 minutes. Remove from the heat and allow to cool completely.
  2. Strain the mixture and reserve the syrup in a small bowl. Stir in the Aperol to incorporate.
  3. Pour 2 to 3 tablespoons of syrup over each cup of crushed ice, then serve with lime wedges.
