Roasted Caprese Sandwich Recipe

The roasted Caprese sandwich provides the ideal amount of tomatoes and cheese with a little bit of garlic, Italian seasoning, and balsamic vinegar to make it incredibly refreshing and also filling. It's like a regular Caprese sandwich but the roasted tomatoes gives it a warm bite and little something different than you're used to. Pair that with a demi-baguette, a piece of sourdough, or ciabatta roll, and you've got yourself one heck of a lunch or dinner. Alternatively, you can press it like a panini. Gather the Caprese sandwich ingredients
First thing's first. Make a list of items that you will need for the roasted Caprese sandwich. Hopefully you may have a few at home already. This recipe requires cherry tomatoes, garlic, olive oil, and salt and pepper. These items together pack a ton of flavor into every bite. In addition, you will need to get Italian seasoning and bread of your choosing. Shelbert recommends using demi baguettes, but alternatively, you can use sourdough or ciabatta. Anything with a little bit of a hard crust is perfect. To complete the list, you will need burrata, balsamic vinegar, and basil leaves.
Prep the cherry tomatoes
To start things off, preheat your oven to 400 degrees. You'll want it nice and toasty for the tomatoes. Next, take out a baking dish and place the tomatoes and garlic cloves in it. Remember, the garlic cloves should be whole and not minced or diced. Then, drizzle some olive oil over the top, and add salt, pepper, and Italian seasoning. Set your timer for 25 minutes and roast the tomatoes until they begin to burst. The aroma of garlic should also start to fill your home.
While the tomatoes are roasting in the oven, you can prep the other items in the meantime.
Slice the bread for your sandwich
Take your baguettes and cut them in half lengthwise or as others call it "the hot dog way." Drizzle a tablespoon of olive oil on each half. Make sure that you get a little over every part of the bread and it's evenly distributed. This will help it the bread to brown and crisp up nicely when you bake it in the oven and add your toppings.
Speaking of toppings, once the tomatoes are done, you can take them out and reduce the oven temperature to 375F. Next, put the baguettes in the oven and toast for five minutes.
Add the roasted garlic to your Caprese sandwich bread
When your timer goes off after five minutes, you can take the bread out. It should have gotten nice and toasty in the oven and let's be honest for a second ... is there anything better than warm bread?
After your take the bread out, you can remove the garlic cloves from the baking dish and squeeze them out from their skin. Spread the roasted garlic on the bottom half of each baguette. Be as generous as you'd like. It should almost feel like a butter mix, and this is a great addition for garlic lovers.
Finish assembling the Caprese sandwich
After adding the first layer to your bread, it's time to pile everything else on your sandwich. Layer each one with first burrata and then top with roasted tomatoes. It's always good to have the cheese as the base layer. Drizzle a little bit of balsamic vinegar on top of the tomatoes, making sure to hit each one so the flavor gets in every bite. Last but not least, layer the basil and then put the other piece of bread on top. These are best when served immediately.
As for serving suggestions? "I like to keep it light and have a fruit plate or a salad, maybe some frites if feeling indulgent," Shelbert shares.
- 2 cups cherry tomatoes
- 4 large cloves of garlic, skin on
- 3 tablespoons olive oil, divided
- salt and pepper
- ¾ teaspoon Italian seasoning
- 2 demi baguettes, or substitute sourdough or ciabatta rolls
- 4 ounces fresh burrata, either one large ball or mini balls
- balsamic vinegar for drizzling
- ½ cup basil leaves
- Preheat oven to 400 degrees. Place tomatoes and garlic cloves in a baking dish. Drizzle with 2 tablespoons of olive oil. Season with salt and pepper and Italian seasoning.
- Roast for 25 minutes until the tomatoes just begin to burst.
- Meanwhile cut the baguettes in half lengthwise. Drizzle the inside halves with the remaining tablespoon of olive oil.
- Remove tomatoes from the oven and reduce oven temperature to 375. Place the baguettes in the oven and toast for 5 minutes. Remove from oven.
- Remove the garlic cloves from the baking dish and squeeze the garlic out from their skins. Spread the roasted garlic on the bottom halves of the baguettes.
- Layer the baguettes evenly with the burrata. Top with the roasted tomatoes. Drizzle with balsamic, and add basil. Serve immediately.
